Mexican Street Corn (Elote) - Authentic Recipe
Introduction: According to Chef Bertha, boiling corn and adding butter is the wrong method. The real street-style method is not to boil but to char the corn. Instead of butter, a creamy dressing is used. That's why people line up for street corn.
Ingredients (For 4 Servings)
- Corn: 4 cobs (husked)
- Mayonnaise: 1/3 cup
- Mexican Crema: 1/3 cup
- Cotija Cheese: 1/2 cup (crumbled, you can use Feta if not available)
- Chili Powder or TajÃn: 1 to 2 tsp
- Lime: 2 (cut into wedges)
- Wooden Sticks: for serving
Instructions
1. Charring the Corn:
Grill the corn directly on a gas burner for 8-10 minutes or on a dry cast-iron skillet for 10-12 minutes. Turn every 1-2 minutes until you get golden and charred black patches. This charring is the real flavor.
2. Make the Dressing:
In a bowl, mix mayonnaise and Mexican crema in equal parts. This mixture sticks to the corn and doesn't drip.
3. Assemble:
Brush the hot corn with the creamy dressing, then roll it in Cotija cheese. Sprinkle chili powder or TajÃn on top and finish with a squeeze of fresh lime juice. Serve immediately.
My Secret Healthy Twist: Turmeric
I added 1/4 tsp of turmeric to the dressing. It gives the corn a beautiful golden color and makes it super healthy due to its anti-inflammatory benefits. Do not add too much to avoid a bitter taste.
